Raw Peaches & Coconut Cream Cheesecake
This cheesecake is so light, refreshing, and easy to make, there’s no reason to go back to the typical cheesecake ways. If you’re not a fan of peaches don’t fret because this recipe can be used with a variety of fruits!
what you will need:
high speed blender or food processor (I highly suggest using a Vitamix)
crust:
6-7 pitted dates
1 cup of pecans (pistachios work well too)
1 splash of vanilla extract
pinch of salt
1/2 T of coconut oil
filling:
2 cups raw cashews
1/2-1 cup of the “cashew water”
1 splash of vanilla extract
1 pinch of salt
1 T coconut oil
1 1/2 cups of fruit (peaches, blackberries, blueberries, strawberries)
** if you make a blueberry cheesecake I suggest adding 1-2 T of lemon juice
instructions:
Begin by boiling a small pot of water, when the water reaches a boil add the 2 cups of cashews. Turn off heat and let them chill while your prepare the crust.
In your blender or food processor, add all of the “crust” ingredients. Blend until everything is about the same size, and sticks together.
Pour the crust into you’re desired pan/dish. I usually use a 9x7 (6 cup) pyrex container because it has a lid, but you can also use a small spring form pan. The narrower the dish, the taller your cheesecake will be. Anyway, once you’ve poured the crust in your desired pan, push it down with a fork.
At this point your cashews will be ready to go. save a cup of the water you just soaked them in, and set aside. Drain off the rest of the water, add the cashews to the just used blender or food processor.
No need to wash the blender or food processor, go ahead and toss in the rest of the “filling” ingredients. Blend until very smooth. I usually add abut 1/2 of the cashew water to begin with, you may or may not need more depending on how smooth you are able to get it.

Pour filling over the crust. Option to decorate the top with bits of your chosen fruit. Freeze for at least an hour! Note that it will get pretty hard after a few hours so you will likely need to thaw it out before trying to chop it up.
